Matcha Pound Cake

I have to confess, I am a little obsessed about matcha as a flavour. I’m in love with anything matcha and would be a sucker for most matcha products. From lattes, ice cream, candy to cake. So why not a pound cake? They are easy to make and most of the ingredients can be found in any household that cooks, with the exception of matcha, not everyone would have a bag of matcha powder lying around would they?

The matcha pound cake is simple, not fancy like a financier, but still really good for a tea time snack. The make or break factor in this is the matcha, don’t be tempted to be lazy or scrimp on a cheap artificial green tea powder from the supermarket or a baking store. Get some proper matcha from a Japanese grocer or even online. The recipe is so simple, it is immediately discern-able when the green tea you use is shoddy.

Matcha Pound Cake Recipe
    Equipment You'll Need:
  • Mixer
  • Mixing Bowl
  • Loaf Pans
  • Oven
  • Baking parchment
  • Brush (for butter)
  • Ingredients:
  • Large eggs - 2 nos
  • Plain Flour - 100g
  • Sugar - 90g
  • Unsalted Butter - 100g
  • Matcha Powder - 15g
  • Baking Powder - 2.5g
    Mise-en-place:
  • Let the butter soften in room temperature for 1 or 2 hours
  • Pre-heat oven to 180°C
  • Sift the dry ingredients (Flour/Matcha/Baking powder) into a separate mixing bowl
  • Beat butter and sugar in the mixer (until colour has lightened to a off-white cream colour)
  • Mix in dry ingredients with a spatula until well incorporated
  • Brush loaf pans with butter and line parchment
  • Fill loaf pan with ¾ full with cake batter
  • Baking:
  • Bake for 30-40 mins
  • Test by inserting a wooded skewer into the centre, when the skewer pulls out clean, cake is done.
